Oriental Gressingham Duck Breast

Serves 4
- 4 Gressingham duck breasts
For the sauce:
- bunch salad onions sliced to 2 inch pieces
- 1 red pepper sliced thinly
For the marinade, mix together
- 2 cloves garlic, finely chopped
- 1 inch piece ginger, peeled and chopped
- 3 tbsp soy sauce
- 3 tbsp white wine vinegar
- tsp 5 spice seasoning
Place duck breasts in marinade for 15 minutes to 1 hour.
Heat some oil in a frying pan and cook the duck for 15–20 minutes turning occasionally.
The soy sauce will cause it to darken, but do not worry. Remove and keep warm.
Add the red peppers to the pan and fry gently for 3 or 4 minutes then toss the salad onions with them for 1 min.
Add in the marinade liquid, cook for a further minute, slice the duck breasts, and return them to the pan and heat through.
Serve with noodles or rice for an oriental feast!
